About Us

Influenced by traditional Italian methods & inspired by modern flavours & tastes our aim is to provide a superior dining experience.

We adhere to traditional slow methods of dough preparation for our pizzas and stock only the finest Italian pasta. Our Fior de latte mozzarella is sourced from Italy as is our “00” flour ensuring that our ingredients are the finest we can source locally and abroad. We slice & chop all our fresh pizza ingredients everyday and prepare our pizza sauce by simply crushing Italian tomatoes. We make our own pesto, aioli, caesar dressing, pate and caramelised onion relish. Everything is prepared daily by us including our freshly baked bread from scratch (no frozen artisan bread here), homemade soups and sauces.

Our ice cream is Mullins real dairy ice cream and our coffee is from Lavazza. We bake our own apple pie, sticky toffee pudding and flourless chocolate brownies and make our own tiramisu. Every ingredient we use is of the highest quality ensuring a pizza or pasta experience created with real integrity.

Our Pizza Dough

We prepare our pizza dough fresh daily using only 100% natural ingredients : fresh yeast, ’00’ Caputo flour, still water and a little salt. Our Pizzaiolo chef hand forms each dough ball and allows it to rest for at least 24 hours. This slow and natural method ensures a distinctive artisan pizza!

We also bake our own country bread every day.
